To sauce your Ribs or not to sauce them. That is the question. I don't sauce myself because I feel when you get a bone later in sauce to me that means you are covering up the flavor and or mistakes

Pork or beef ribs? I do Pork and sauce them a bit at the end and wait till it crisps up. Then have the sauce on the counter for those that want them real wet. My fam likes it so I stick with it. I do see your point though.

I have never cooked Beef ribs. I guess when I had some they were drier than the Mojave desert so that turned me off of them

Brining makes all the difference! A dry brine (just coat them in Kosher salt and wrap tightly in plastic wrap/foil) refridgerated overnight before the cook will help beef ribs stay moist. Remove the bulk of the salt before cooking either by wiping or rinsing, then coat in the dry rub of your choice.
