BEFORE: Playing with sourdough today. Added einkorn wheat, which I never used, but increased the water by 5% to increase hydration to 75%.

AFTER: Just baked that loaf, and boy, is it beautiful. That EAR! (last pic) Can't wait for it to cool so I can try it :) Baking bread is such a joy. #sourdough

It's delicious! I just had a slice (cut perpendicular to the ear, they're huge) and made a sandwich. It's soft, flavorful with a crunchy crust but not a lot of sourdough tang. I'd leave it another 24 hours to proof in the fridge next time. Any flavor diff with 30% einkorn flour was negligible.

I knew it would be good. Your photos were just as good. I used to bake bread a lot but never tried sourdough. You might have just changed my mind. Enjoy the rest of that loaf! Thanks for letting me know!
