Back in the early '80's when I was getting food stamps, they were also giving out five-pound blocks of American cheese. These days I try to cut down on dairy, but at the time, wow, it was great, I could cook so many things with it.

it’s not actually cheese, not legally.The FDA calls it “pasteurized processed American cheese food.” In order for a food product to be a true “cheese,” it has to be more than half cheese. An American cheese single contains less than 51% curds, which means it doesn’t meet the FDA’s standard.

But that is the entire point of American cheese, as far as I can see, it is only meant to be melted, over a burger, in a grilled cheese, on pizza… you would never eat American cheese on its own on a cracker the way you can other countries cheese, because it has a really bland plasticky flavour.
